Recipe Spotlight: Fat Free Buffalo Chicken Dip

February 2017

Your New Favorite Crowd Pleaser

Now that it’s February, the new year is solidly underway and “the holidays” are behind us. Still, somehow events keep popping up and tempting us to eat and drink with abandon. Next up is Super Bowl Sunday.

In the interest of creating a responsible snack option, we offer this incredibly delicious “This Not That” type recipe for Buffalo Chicken Dip. While those who are cool with the calories chow down on wings, anyone trying to take it easy or just consume a few vegetables during the game can enjoy this amazing dip. It’s certainly not a compromise in the flavor department.

We recommend an accompaniment of Frito’s scoops, celery sticks, and/or baby carrots for dipping. A combination of vegetable and chip options will please every palate.

Ingredients

  • 2 (8 ounce) packages Fat-Free cream cheese, softened
  • 1 cup Fat-Free ranch dressing
  • 3cup Frank’s Red Hot
  • 1 (10 ounce) can chicken breast, drained (or equivalent shredded rotisserie)
  • 3/4 cup Shredded Fat-Free cheddar cheese

Directions

  1. In a medium saucepan, combine hot sauce and chicken over medium heat, stirring constantly.
  2. Add ranch and cream cheese and stir until softened and well blended.
  3. Add 1/2 cup cheddar cheese and stir until melted.
  4. Transfer dip to small crock pot and spread remaining cheddar cheese on top.
  5. Set to low heat to keep warm.
